Apple Salvation, which we expect this Sunday, is celebrated annually on August 19. More religious, this holiday positively influenced the formation of culinary traditions in Russia. On the day of salvation, luxurious tables were set and the housewives honed their skills in preparing dishes from apples: boiled and baked, pickled and fresh. It’s nice that restaurants pick up and honor the theme of seasonality and locality, and this time we will delight us with special apple dishes. Apple saved, it is also “the first autumn”, perhaps the most interesting summer holiday in terms of gastronomy. Appearing as part of the Orthodox culture, today it is celebrated by a wide audience as an event that focuses only on fruit.
And yet, the ancestors of this day was a “turning point” – from summer to autumn. In the “first autumn”, the harvest of spring crops began, it was customary to count how many things were spoiled in the beds, go on a visit, perform a mass of rites and follow beliefs. Before eating an apple, young girls “started talking” to him for a quick marriage. And the first apple eaten on this day should tell what to expect in the coming year: sour – to trouble, and sweet – then it means how it works! And for those undecided with taste there was an answer: sweet and sour fruit always meant happiness in family life, peace and comfort in the house.
The most important ritual on any holiday is, of course, a feast. It was customary for the whole family to gather at a richly laid table with apple treats.
And here is how Moscow restaurants offer to mark this day.
Drinking establishments are inviting themselves to an aperitif: the Birmarket bar, the PIVBAR network and the Belgeek that opened this summer. This weekend, on August 18 and 19, there will be ten different cider varieties (starting at 200 rubles) from France, Great Britain and Sweden to celebrate Apple Spas.
The “Balalaechnaya” bar started a charity lottery “I saved an apple!”, For participation in which it is enough to order any dish from a special menu or buy any number of apples at a symbolic price from August 17 to 19, inclusive. The proceeds will be transferred to the fund for helping orphanages. And among the most active guests of the bar will play gift certificates.
On August 19, a thematic menu will appear in the Shinok restaurant of Ukrainian cuisine. Chef Elena Nikiforova with apples makes a salad of turkey baked with tarragon (760 rubles), duck roast (1390 rubles) and author’s charlotte (590 rubles) with caramel sauce and homemade sour cream. They also pour it here – homemade lemonade made from seasonal apples (400 rubles per glass).
Beer restaurants Jan Primus are ready for any important gastronomic dates. Chef Anatoly Anoshin serves the duck leg of confit (645 rubles) with the perfect accompaniment – puree from the first sour apples and garden sweet raspberry sauce. The beer list always has several European and Russian cider varieties.
Grand Cafe “Dr Zhivago” honors Slavic traditions and annually prepares thematic desserts that can be tasted from August 19 to 26. This season’s special offer includes apple tartlet on almond-sand dough with apple jam, fresh apples and red currants (370 rubles), as well as apple pie served with a scoop of vanilla ice cream (390 rubles). All children will be treated to caramel apples this Sunday.
And more about the sweet. In the fish restaurant “Cheretto Sea” they prepare apple crostat (430 rubles) in the form of a fish that meets the leading theme of the menu. Caramelized apples are spread on a thin puff pastry with the addition of almond flour. Nearby is a scoop of homemade blueberry ice cream and vanilla sauce.
